Australian Truffle season at Republique L.A.

That’s just what happened at Republique in Los Angeles. A menu to highlight the versatility of the black period truffle from Australian company The Truffle and Wine Co. The Australian season is different from all other countries do to its shift in harvest time being early in the summer because of its location in the southern hemisphere. Providing high quality black truffles to American and European chefs to craft dishes for food aficionados for a longer part of the year. The menu highlights on show at Republique on La Brea where a Brillat Savarin Crostini with black truffle. The fresh yet complexly sharp flavors of the cheese pair well with the more subtle flavors of the Australian truffle. If cheese isn’t your thing then how about a Beef Tartare with pickled red onions and topped with what else, Black Truffle. You can also go the decadent route, well more decadent, how about a Vanilla Bean Ice Cream with Homemade Sugar-cones topped with some black truffle. Now I know getting truffles for personal cooking can be rather difficult to almost impossible but there is another option. Moody Tongue Brewing Company out of Chicago, a culinary brewing company sourcing ingredients the same way chefs source theirs, has crafted a beer with black truffles. A great option for pairing with food.
