Wille Jane’s Recipe for Buttermilk Biscuits by Executive Chef Govind Armstrong

Willie Jane-Buttermilk biscuits with Burnt Orange Honey Butter

Executive Chef Govind Armstrong 

Buttermilk Biscuits 

1 cup butter

4 c. flour

3 tbsp baking powder

1/2 tsp salt

1/4 cup sugar

2 cups buttermilk

Preheat oven to 425˚

Cube or grate cold butter

Mix all dry ingredients together

Cut butter into dry ingredients

Fold in buttermilk

Gently work mixture together, until combined

Fold dough onto itself, 3 times

Cut into desired shape, then brush tops with cream or melted butter

Sprinkle tops with a pinch of natural sugar

Bake for approximately 15 minutes

Serve warm

Burnt Orange Honey Butter 

1 Orange, peeled and halved

1 Cup Fresh Orange juice (pulp free)

2 cups Butter (softened)

4 T. Lavender Honey

Place a heavy bottomed sauce pan over medium heat

Place halved oranges cut side down inside pan

Allow oranges to sit until they have developed a deep caramelized color, turning once, about 10 min

Add in juice to deglaze

Reduce contents to a syrup, about 15 minutes

Pass and push oranges and reduced juice through chinoise or fine mesh sieve

Cool resulting juice to room temperature

Place butter in food processor

Drizzle in honey and orange syrup

Lightly process and serve soft alongside warm biscuits
