Lemon Chess Pie

  • Zest of 1 lemon
  • 1 2/3cup cups of granulated sugar
  • 1tablespoon stone-ground yellow cornmeal
  • 1tablespoon flour
  • 1/2teaspoon kosher salt
  • 5tablespoons unsalted butter, melted
  • 5Large eggs
  • 2/3cups heavy cream
  • 7tablespoons fresh lemon juice (from about 3 lemons)
  • 3tablespoons fresh orange juice
  • 1/2teaspoon vanilla extract


  1. This pie uses our All-Butter Crust for a 9-inch single-crust pie, partially prebaked.
  2. Position a rack in the center of the oven and preheat the oven to 325°F.
