M’sakhan (Roast Chicken with Onion and Sumac Flatbread)

  • 1½ cups flour, plus more
  • 1 tsp. kosher salt, plus more to taste
  • ¾ cup water, heated to 115°
  • 1½ tsp. sugar
  • 1 (¼-oz.) package active dry yeast
  • 1 (3½-4-lb.) chicken, quartered
  • Freshly ground black pepper, to taste
  • ¾ cup olive oil, plus more for greasing
  • ½ cup ground sumac
  • ½ tsp. ground allspice
  • ½ tsp. ground cinnamon
  • 2 large yellow onions, minced
  • ½ cup chicken stock
  • 2 tbsp. unsalted butter
  • 1 cup slivered almonds

INSTRUCTIONS

1. Whisk flour and salt in a bowl. Combine water, sugar, and yeast in the bowl of a stand mixer fitted with a hook; let sit until foamy, about 10 minutes. With the motor running, slowly add flour mixture; mix until dough forms, about 3–4 minutes. Cover with plastic wrap; set in a warm place until doubled in size, about 1 hour.
