Waylynn Lucas’ Strawberry-Buttermilk Fōnuts

1 ¼ cups (5 oz.) all-purpose flour, sifted
¾ cup sugar
½ tsp. baking soda
½ tsp. kosher salt
⅔ cup canola oil, plus more for greasing
½ cup buttermilk
1 egg
½ tsp. white vinegar
½ tsp. vanilla extract
½ cup finely chopped strawberries
2 cups confectioners’ sugar
