The Talking Dish: Upper West

Executive Chef Nick Shipp of Upper West describes his cooking techniques and inspiration for two of his most popular appetizers.

Upper west is one of my personal favorite happy hour hangs. I am a “woman of a certain age”  and so truly appreciate the attention to details like: awesome music selections, cozy but well spaced tables, classic movies projected against the wall and acoustic panels hung from the ceiling to keep room noise down.  I also love that the clientele is largely local business folks who live in the neighborhood ( east Santa Monica / Pico & Centinela).

Chef Nick Shipp is as warm and friendly as he is talented. No doubt a remnant from his time in the south, which may also explain his hunky guy menu selection like Braised Pork Belly ~ YUM!

Dishes Prepared:

BRAISED PORK BELLY – braised pork belly / fennel-apple & chorizo hash / harissa / prosciutto craklin’ / tomato syrup

CARPACCIO - toasted cumin tzatziki / grilled romaine / kalamata / za’tar /  pecorino /     caper-honey vinaigrette
