FOOD PHILOSOPHY
Tender Greens is slow food done fast. Our restaurants serve fresh, healthy, chef-inspired, farmer’s market sensible dishes at an affordable price in a relaxed environment. By working with small local farmers, ranchers, artisans, boutique wineries, breweries and coffee roasters, we are able to provide the best quality ingredients and products for our guests.

We believe there should be a conscious connection between the one who eats the food and the source of that sustenance. Our beef comes from grain-fed hormone/antibiotic free cows. Our chickens are raised on the range in Northern California, not in cages. They are given grain instead of hormone-rich feed. Our tuna is sustainably line caught from the Pacific.

Our dedication to using only the finest ingredients extends not only to the raw products but to everything else we use in our recipes – cold pressed olive oils, mustards, vinegars, cheeses and wonderful nuts and ground spices all help bring you the best dishes we can make. Likewise, we look for local boutique wineries, cool microbreweries and organic tea blenders to provide beverages that reflect the same commitment and care.

Breads are made fresh daily by artisan bakeries who, like us, are dedicated to using the finest ingredients available for their products. Our desserts are baked at the restaurants every day.

Chefs

Each restaurant is led by an executive chef with a fine dining background and experience cooking at top notch restaurants. For example, San Diego’s Pete and Peter Balistreri worked at the Five Diamond Lodge at Torrey Pines. Walnut Creek’s Chef Sean Canavan got his start at the Michelin Starred Bamberger Reiter Restaurant in his home country of Germany. Before coming to Tender Greens, Hollywood’s Executive Chef Eric Hulme cooked for dignitaries like Bill Clinton and the Queen of England when he worked at the Downtown Club on Philidelphia’s Independence Square. Our chefs bring their unique backgrounds, culinary interests and personal flare to create a unique feel at each restaurant.
Our restaurants offer a relaxed, laid back atmosphere, outdoor patios and modern interior design made, whenever possible, from recycled materials and environmentally friendly products. Each location features custom artwork by local artists who create pieces that capture the feel of their respective communities. These include Hollywood’s pop art by Kii Arens, our homage to Pasadena by Chris Reccardi and Irvine’s custom art by 123 Klan. Our goal is to create an atmosphere that is comfortably urban yet cool enough for a date and relaxed enough for a bite before a movie.

We incorporate eco-friendly design consisting mostly of reclaimed, recycled and environmentally friendly materials with much of it FSC and LEED certified. New restaurants make use of timber from the old spaces which are transformed into tables and countertops to reduce waste. The indoor and outdoor spaces are bright and relaxed with comfy, modern furnishings and accents.
